INGREDIENTS:
12 slices of deli ham
1 cup shredded cheddar cheese
1/2 cup sliced pepperoni
8 large eggs
1/4 cup almond milk
Salt and pepper to taste
Chopped fresh parsley (optional, for garnish)
INSTRUCTIONS:
Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
Line each muffin cup with a slice of deli ham, pressing it down gently to form a cup shape.
Sprinkle a small amount of shredded cheddar cheese into the bottom of each ham cup.
Add a few slices of pepperoni on top of the cheese.
In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Pour the egg mixture evenly into each ham cup, filling them about three-quarters of the way.
Top each cup with more shredded cheddar cheese.
Bake in the preheated oven for about 15-20 minutes, or until the eggs are set and the cheese is melted and golden.
Remove from the oven and let the breakfast cups cool for a few minutes.
Use a knife or spoon to gently remove the cups from the muffin tin.
Garnish with chopped fresh parsley, if desired.
