INGREDIENTS:
1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
1 cup enchilada sauce (sugar-free and low-carb)
8 low-carb tortillas (such as almond flour or coconut flour tortillas)
1 cup shredded cheddar cheese
Optional toppings: sour cream, chopped cilantro, diced tomatoes
INSTRUCTIONS:
Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray and set aside.
In a skillet, cook the ground beef over medium heat until browned.
Drain any excess fat from the skillet.
Add the diced onion, minced garlic, chili powder, cumin, paprika, salt, and pepper to the skillet with the cooked beef. Sauté until the onion is translucent and the spices are fragrant.
Pour half of the enchilada sauce into the bottom of the greased baking dish.
Warm the low-carb tortillas according to the package instructions.
Spoon some of the beef mixtures onto each tortilla, roll them up, and place them seam-side down in the baking dish.
Pour the remaining enchilada sauce over the rolled tortillas, spreading it evenly.
Sprinkle the shredded cheddar cheese on top.
Bake the enchiladas in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let them cool for a few minutes.
Serve the keto beef enchiladas with optional toppings like sour cream, chopped cilantro, lime, and diced tomatoes.
