Ingredients
Bread:
*9 tablespoons butter
*6 eggs
*1.5 tsp vanilla
*3/4 cup fresh blueberries
*1/2 tsp cinnamon
*2/3 cup Monk Fruit
*2 tbsp heavy whipping cream
*2 tbsp sour cream
*½ tsp salt
*1.5 tsp baking powder
*10 tbsp coconut flour
Icing:
*2 tbsp monk fruit powdered
*1/4 tsp lemon zest
*1 tsp butter melted
*1 tbsp heavy whipping creamdash of vanilla
Instructions
*Preheat oven to 350 degrees
*Add parchment paper to loaf panr.
*Melt butter.
*Mix eggs, monk fruit, sour cream, vanilla, salt, baking powder, heavy whipping cream, and cinnamon.
*Add the melted butter to the mixture and beat again until combined.
*Spoon up a small amount of batter in the loaf pan, then sprinkle a couple of blueberries on top.
Continue layering batter then blueberries a couple of times ending with batter on top.
Bake for 65-75 minutes and allow bread to cool for 5 minutes.
Icing:
Mix all ingredients.
Add additional heavy whipping cream if needed.
Pour over warm bread.
