This Keto Broccoli Parmesan Chicken Soup is rich, creamy, and packed with flavor. It's a perfect option for a satisfying and low-carb soup that's great for your keto Thanksgiving or any meal. Enjoy!
INGREDIENTS:
2 cups of broccoli
2 Tbsp olive oil
3 cloves garlic, minced
1 medium yellow onion, diced
1/2 tsp salt
1/2 tsp fresh cracked black pepper
4 cups chicken broth
1/2 cup Parmesan cheese
1/2 cup cream
1 cooked chicken breast, I used a rotisserie chicken shredded
INSTRUCTIONS
Cut broccoli into small florets, and slice thinly the stems
Set a pot of water to boil for blanching the broccoli
In a large soup pot, saute broccoli stems, onion and garlic for about 5 mins
Plunge the florets into the pot of boiling water for about 30-45 seconds,
Drain and rinse with cold water
Add the chicken broth to the soup pot
Add the broccoli florets (reserving half a cup for garnish)
Let it simmer
Add in cheese
Add the cream, and let it simmer
Put into bowls garnished with the reserved broccoli florets and shredded chicken.
Top it with Parmesan cheese or black pepper
