INGREDIENTS

  4. 1 teaspoon vanilla extract

For the Cheesecake Filling:

  1. 16 oz (450g) cream cheese, softened

  2. 2/3 cup powdered erythritol

  3. 2 large eggs

  4. 1 teaspoon vanilla extract

For the Cinnamon Swirl:

  1. 2 tablespoons melted butter

  2. 2 tablespoons powdered erythritol

  3. 2 teaspoons ground cinnamon


INSTRUCTIONS


Preheat Oven:

  • Preheat your oven to 325°F (163°C). Line a baking dish with parchment paper, leaving some overhang for easy removal.

Prepare the Crust:

  • In a bowl, combine almond flour, melted butter, powdered erythritol, and vanilla extract. Press the mixture into the bottom of the prepared baking dish to form the crust.

Pre-Bake the Crust:

  • Bake the crust in the preheated oven for about 10 minutes or until it's just starting to set.

  • Remove from the oven and let it cool slightly.

Prepare Cheesecake Filling:

  • In a large bowl, beat the softened cream cheese until smooth.

  • Add powdered erythritol, eggs, and vanilla extract.

  • Beat until well combined and smooth.

Assemble Cheesecake Bars:

  • Pour the cream cheese mixture over the pre-baked crust, spreading it evenly.

Create Cinnamon Swirl:

  • In a small bowl, mix together melted butter, powdered erythritol, and ground cinnamon.

  • Drizzle this mixture over the cream cheese layer.

Swirl the Layers:

  • Use a knife or skewer to create a swirling pattern by gently dragging it through the cream cheese and cinnamon layers, creating a marbled effect.

Bake:

  • Bake in the preheated oven for 25-30 minutes or until the edges are set, and the center is slightly jiggly.

Cool and Chill:

  • Allow the cheesecake bars to cool in the baking dish, then transfer to the refrigerator to chill for at least 3-4 hours or overnight.

Serve:

  • Once fully chilled, lift the cheesecake out of the dish using the parchment paper overhang. Cut into bars and serve.
