INGREDIENTS:
For the chicken tenders:
1 pound boneless, skinless chicken breasts, cut into strips
2 cups almond flour
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
Cooking oil (such as avocado oil or coconut oil) for frying
For the dipping sauce (optional):
1/4 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon fresh lemon juice
1/2 teaspoon garlic powder
Salt and pepper to taste
INSTRUCTIONS
Deep frying:
In a shallow bowl, whisk together the almond flour, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper. This mixture will be used to coat the chicken tenders.
In another shallow bowl, beat the eggs.
Dip each chicken tender into the beaten eggs, allowing any excess to drip off.
Coat the chicken tender with the almond flour mixture, pressing the mixture onto the chicken to ensure it sticks well.
Place the coated tenders on a plate or baking sheet.
Heat about 1/2 inch of cooking oil in a large skillet over medium-high heat.
Once the oil is hot (about 350°F or 175°C), carefully add the chicken tenders to the skillet.
Cook them for about 3-4 minutes per side, or until they are golden brown and cooked through. The internal temperature should reach 165°F (74°C).
Remove the chicken tenders from the skillet and place them on a plate lined with paper towels to drain any excess oil.
For Air-Frying:
Follow steps in prepping chicken tenders above
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Lightly spray the air fryer basket with avocado oil or olive oil cooking spray to prevent sticking.
Place the coated chicken tenders in a single layer in the air fryer basket, leaving some space between them to allow for proper air circulation.
Cook the chicken tenders in the air fryer at 400°F (200°C) for 12-15 minutes, flipping them halfway through the cooking time.
The tenders should be golden brown and have an internal temperature of 165°F (74°C).
Remove the chicken tenders from the air fryer and let them cool for a minute or two before serving.
For the dipping sauce (optional), whisk together mayonnaise, Dijon mustard, fresh lemon juice, garlic powder, salt, and pepper in a small bowl.
Serve the keto chicken tenders hot with the dipping sauce on the side, if desired.
