INGREDIENTS


For the Cheesecake Base:

  1. 8 oz (225g) cream cheese, softened

  2. 1/4 cup powdered erythritol (or any keto-friendly sweetener)

  3. 1 teaspoon lemon zest

  4. 1 tablespoon lemon juice

  5. 1 teaspoon vanilla extract

  6. 1/2 cup Crushed nuts (almond, or pecan or mixed)

  7. 2 tbsp melted butter

  8. A pinch of salt


For the Blueberry Swirl:

  1. 1/2 cup fresh or frozen blueberries

  2. 1 tablespoon water

  3. 1 tablespoon powdered erythritol (or to taste)


INSTRUCTIONS


Preheat Oven

Preheat your oven to 325°F (163°C). Line a mini muffin tin with paper liners.


Prepare Cheesecake Base

In a mixing bowl, beat the softened cream cheese until smooth.

Add powdered erythritol, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Mix until well combined.


Blueberry Swirl

In a small saucepan, combine blueberries, water, and powdered erythritol. Cook over medium heat until the blueberries break down and the mixture thickens slightly (about 5 minutes). Mash the blueberries with a fork or spoon to create a chunky sauce.


Assemble Cheesecake Bites

Combine crushed nuts and butter, scoop mixture into the mini muffin tin, filling each cup about 1/3 full, then spoon the cheesecake mixture next, add a small dollop of the blueberry sauce on top of each cheesecake cup.


Swirl the Blueberry Sauce

Use a toothpick or a skewer to gently swirl the blueberry sauce into the cheesecake mixture, creating a marbled effect.


Bake

Bake in the preheated oven for 15-18 minutes or until the edges are set but the centers are slightly jiggly.


Cool

Allow the cheesecake bites to cool in the muffin tin for about 10 minutes, then transfer them to a wire rack to cool completely.


Chill

Refrigerate the cheesecake bites for at least 2 hours or overnight for best results.

Serve:


Once chilled, remove the cheesecake bites from the muffin tin and serve. Optionally, garnish with additional lemon zest or fresh blueberries.
