INGREDIENTS:
For the Meatballs:
1 lb ground beef or a mixture of ground beef and pork
1/4 cup almond flour
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup grated onion
1 egg
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
For the Casserole:
1 1/2 cups sugar-free marinara sauce (check the label for low-carb options)
1 1/2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil leaves, for garnish (optional)
INSTRUCTIONS
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine all the meatball ingredients - ground meat, almond flour, grated Parmesan, chopped parsley, grated onion, egg, minced garlic, salt, black pepper, and optional red pepper flakes. Mix until well combined.
Shape the meat mixture into small meatballs, approximately 1 to 1.5 inches in diameter. You should get around 20-24 meatballs.
Place the meatballs in a large oven-safe casserole dish.
Pour the sugar-free marinara sauce over the meatballs, ensuring they are well coated.
Sprinkle the shredded mozzarella and grated Parmesan cheese over the top.
Cover the casserole dish with foil or an oven-safe lid.
Bake in the preheated oven for about 25-30 minutes.
Remove the foil or lid, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the meatballs are cooked through (an internal temperature of 160°F or 71°C is recommended for ground beef).
If desired, you can broil the casserole for 2-3 minutes to brown the cheese on top.
Garnish with fresh basil leaves, if you like, before serving.
