What’s for dinner?
INGREDIENTS:
8oz sausage, mild or spicy
1/3 cup onion, chopped
2 cloves garlic
1/4 roasted tomatoes, chopped
1 cup broccoli, chopped
1/2 cup cream
1/2 water
1/2 cup parmesan, freshly grated
Salt + pepper
Spaghetti squash
INSTRUCTIONS:
Over medium heat, sauté sausage, breaking it up into crumbles, for 4 minutes
Add in onion and continue to cook
Once onions are translucent, add garlic, tomatoes, and broccoli
Add in cream, water, and parmesan cheese
Simmer until the sauce thickens
Season with salt + pepper to taste
Serve over top spaghetti squash
BEST Spaghetti Squash
INGREDIENTS:
1 squash
1/4 cup olive oil
1 tsp Italian seasoning
1 clove garlic, chopped finely
Salt
Pepper
INSTRUCTIONS:
Mix together oil, garlic, and seasonings in a bowl.
Cut spaghetti squash in half and remove seeds
Rub the oil mixture over the flesh of the spaghetti squash
Place squash cut side down (so it lays flat) on a foil-lined baking sheet
Baked for 20 minutes at 420º F, until tender.
Use a fork to remove squash from the skin
