Low carb Blueberry Muffins
Mmmm... you're going to love this tasty Low Carb Muffins. A Family favorite!
Ingredients
* 1/4 cup coconut flour
* 1/2 teaspoon baking powder
* 1/4 cup Monk Fruit
* 3 large eggs
* 1/4 cup sour cream
* 1 teaspoon almond extract
* 1 cup blueberries Instructions
Directions
* Preheat the oven to 350 and grease a 6-cup muffin pan or we used mini muffin tin
* Mix together the flour and monk fruit
* Add eggs and mix in well
* Add sour cream and mix until smooth
* Lightly stir in blueberries
* Scoop the batter into the prepared muffin cups, filling each about 3/4 full.
* Bake the muffins for about 15-20 minutes until the tops have browned
