Vegetable Beef Soup

Who loves soups for the cold winter days?


Beef soup for to warm your cold days

INGREDIENTS:

  • 1 pound of ground meat

  • 1 small diced onion

  • 2 cloves of minced garlic

  • 1 cup chopped carrot (optional)

  • 1 cup chopped celery

  • 1 cup diced turnips (a great potato replacement in soup, one cup has six net carbs)

  • 1 cup chopped mushroom

  • 1/2 cup diced green pepper

  • 1/2 cup chopped zucchini

  • 1 can diced tomato (or if you like spicy like us use Rotel with habanero)

  • 1 six ounce can of tomato paste

  • 6 cups of broth (I used half chicken half beef)

INSTRUCTIONS:

  1. In a soup pot over medium, brown 1 pound of ground meat with one small diced onion

  2. Throw in 2 cloves of minced garlic, 1 cup chopped carrot (optional), 1 cup chopped celery, 1 cup diced turnips (a great potato replacement in soup, one cup has six net carbs), 1 cup chopped mushroom, 1/2 cup diced green pepper , 1/2 cup chopped zucchini, 1 can diced tomato (or if you like spicy like us use Rotel with habanero), 1 six ounce can of tomato paste, 6 cups of broth, I used half chicken half beef

  3. Season generously with whatever spices you like, I use pink salt, fresh ground pepper, cayenne pepper, garlic and onion powder, paprika and Tajin lime seasoning (it gives it this amazing acidity)!

  4. Pop a lid on it and simmer until the veggies are tender, about 10-15 minutes.
