Who loves soups for the cold winter days?
INGREDIENTS:
1 pound of ground meat
1 small diced onion
2 cloves of minced garlic
1 cup chopped carrot (optional)
1 cup chopped celery
1 cup diced turnips (a great potato replacement in soup, one cup has six net carbs)
1 cup chopped mushroom
1/2 cup diced green pepper
1/2 cup chopped zucchini
1 can diced tomato (or if you like spicy like us use Rotel with habanero)
1 six ounce can of tomato paste
6 cups of broth (I used half chicken half beef)
INSTRUCTIONS:
In a soup pot over medium, brown 1 pound of ground meat with one small diced onion
Throw in 2 cloves of minced garlic, 1 cup chopped carrot (optional), 1 cup chopped celery, 1 cup diced turnips (a great potato replacement in soup, one cup has six net carbs), 1 cup chopped mushroom, 1/2 cup diced green pepper , 1/2 cup chopped zucchini, 1 can diced tomato (or if you like spicy like us use Rotel with habanero), 1 six ounce can of tomato paste, 6 cups of broth, I used half chicken half beef
Season generously with whatever spices you like, I use pink salt, fresh ground pepper, cayenne pepper, garlic and onion powder, paprika and Tajin lime seasoning (it gives it this amazing acidity)!
Pop a lid on it and simmer until the veggies are tender, about 10-15 minutes.
